以河北沙城产区2009年份与2010年份的长相思及龙眼干白葡萄酒为研究对象,探讨年份和品种对干白葡萄酒中主要贡献代谢产物种类和相对含量的影响。利用核磁共振氢谱(1H-NMR)结合主成分分析法(Principal component analysis, PCA),判别出不同年份和品种干白葡萄酒间代谢产物存在显著差异,通过偏最小二乘判别分析(Partial least squares discriminant analysis,PLS-DA)发现代谢产物种类差异不显著,相对含量差异显著。2种葡萄酒的主要代谢产物是2,3-丁二醇、甘油、琥珀酸、乙酸乙酯、胆碱和脯氨酸; 区分同一品种不同年份的主要贡献代谢产物是脯氨酸、琥珀酸、胆碱和甘油; 区分同一年份不同品种的主要贡献代谢产物是乙酸乙酯、脯氨酸、琥珀酸、胆碱和甘油。表明利用1H-NMR检测结合模式识别分析干白葡萄酒代谢产物,可以区分干白葡萄酒的年份和品种。
Abstract:
The Sauvignon blanc and Long Yan dry white wines from Shacheng,Hebei province,vinified in 2009 and 2010 vintages, were taken as the research objects. Significant differences in metabolites of dry whites wines of two vintages and two grape varieties were detected by 1H-NMR combining principal component analysis(PCA). Partial least squares discriminant analysis(PLS-DA)revealed that there was no significant difference in the components but significant difference in the contents of metabolites. The major metabolites are 2,3-butanediol,glycerol,succinic acid,ethyl acetate,choline and proline. The metabolites distinguishing the same grape variety wine of two vintages were proline,succinic acid, choline, and glycerol, while the metabolites distinguishing the same vintage of two grape varieties wines were ethyl acetate,proline,succinic acid, choline and glycerol. The results suggest that 1H-NMR analysis combined with the multivariate statistical analysis is capable of discriminating the vintage and grape variety of dry white wines.
