摘要:
羽毛是禽类加工过程中的主要副产物之一,富含角蛋白,是一种极具开发潜力的动物来源的蛋白质资源。由于其分子内存在大量二硫键和氢键,导致羽毛角蛋白空间结构紧密,难以被高效降解,限制了其高值化利用。本文系统综述了羽毛角蛋白的结构特性、主要降解方法(包括物理法、化学法和生物法),并重点阐述了生物降解法的机制。同时,概述了降解产物的组成及其在多个领域的应用前景,探讨了当前禽类羽毛角蛋白资源的利用现状与面临的挑战,旨在为其高值化利用提供参考。
Abstract:
Feather is one of the main by-products of poultry processing, which is rich in keratin and is a potential animal protein resource. Due to the existence of a large number of disulfide bonds and hydrogen bonds within the feather keratin molecule, its spatial structure is highly compact, making efficient degradation difficult and thereby limiting its high-value utilization. This paper provided a systematic review of the structural characteristics of feather keratin and its primary degradation methods, including physical, chemical, and biological approaches, with a particular emphasis on elucidating the mechanisms underlying biological degradation. Additionally, it outlined the composition of degradation products and their potential applications across multiple fields, while discussed the current utilization status and challenges faced in poultry feather keratin resource, aiming to provide guidance for their high-value utilization.
